Summertime, summertime, summertime!! Summer is known for so many good foods but my absolute favorite is frozen yogurt! Especially this one because it's full of chocolate chips! It's so hot outside in the summer and you need a soft serve frozen yogurt recipe to cool off your hot days!
Ok, who doesn't love a good cool treat during the summer? I know I do and I typically go for the typical ice cream as my cool treat. But this summer, I wanted to try something different. I wanted to try making a gluten-free soft-serve frozen yogurt that had a cookie bar with chocolate chip base. One of my favorite desserts is a frozen yogurt with cookie dough in the middle, but I struggle with that because I never know if the cookie dough is gluten-free. So I thought, I'll just make my own!!
I've never made homemade ice cream before, nor frozen yogurt so I knew this one was going to be a challenge. But it turns out, it was super easy and oh my oh my, it was so good! I'm not sure if you know this but Van's has a snack bar that comes in chocolate chip and it's gluten-free! My kids eat Van's snack bars all the time...the Strawberry PB&J, Blueberry PB&J and the Gramwich bars...but I love anything chocolate chip so I decided to explore with the Chocolate Chip snack bar in my frozen yogurt.
I love Van's Chocolate Chip snack bars because they are gluten-free, whole grain snack bars that pack a nutritious punch without packing in a lot of calories. These guilt-free treats keep it real with no high fructose corn syrup, artificial ingredients, hydrogenated oils or GMO oils, and offer 10 grams of whole grains! Van's makes wholesome food delicious and easy for busy, active adults and kids alike. And come on...I know I get as giddy as a school kid when I get to eat a frozen treat like frozen yogurt or ice cream!
Since I've never made homemade ice cream or frozen yogurt, I was a little intimidated because this one can be made without an ice cream maker! What??!? Yep - that's a good thing too because I don't have an ice cream maker! Ok, so this one is super simple and has simple ingredients. So easy that my 9 year old made most of this recipe...yep that's a winner!! And we had so much fun making this together!!
I'm going to tell you how to make this one below, but it's literally crumbling up a couple of Van's Chocolate Chip snack bars and stirring together 8 ingredients. You will want to put this one is a dish that you can easily stir several times as it sets in the freezer. Sprinkle some chocolate chips on top and you are ready to let it set!
With this recipe, you will need to stir while it is in the freezer. I like my frozen yogurt more on the soft serve side. As you can see below, it should be super easy to roll your ice cream scoop and get a nice firm scoop, yet not too firm so it's still on the soft side. And look at those Van's Chocolate Chip snack bars crumbled up in the frozen yogurt. So yummy! Tastes like cookie dough frozen yogurt! I'm in love!
Ok, so who's ready to dive in and make this recipe?! If you have kiddos, I would recommend letting them help make this one. My kids had a blast crumbling the bars and sprinkling in the chocolate chips. Oh - and sifting the confectioners sugar was fun...and messy because they shook the sifter instead of using the handle! I will teach them one day how to use the sifter but for right now, it's all about having fun and making memories together...especially when these memories look and taste so amazing! Enjoy this one!
Chocolate Chip Frozen Yogurt
Ingredients
- 2 cups plain greek yogurt OR vanilla yogurt if you want a sweeter frozen yogurt
- ¼ cup canned coconut milk
- ¼ teaspoon vanilla
- ⅓ cup cocoa sifted
- ½ cup confectioners sugar
- pinch of salt
- ½ cup mini chocolate chips
- 3 bars of Van's Chocolate Chip Snack Bars
Instructions
- In a bowl, stir together the yogurt, coconut milk, vanilla and salt.
- Sift in the confectioners sugar and cocoa powder. NOTE: This step is important because if you dump it in, both powders will clump. This will leave you with little pockets that won’t mix.
- Stir in the chocolate and pour into a freezer container. Add the mini chocolate chips and 2 crumbled Van's Chocolate Chip snack bars. I used a glass dish that I knew would be safe in the freezer and allow me to easily stir.
- Freeze for 45 minutes. After 45 minutes, take out and stir.
- Freeze for another 30 minutes. After 30 minutes, take out and stir again.
- Repeat until desired consistency is reached.
- When you are ready to serve, I take the other Van's Chocolate Chip snack bar and crumble and put on top.

I do like the option of making frozen treats without needing an ice cream maker. My husband's favorite ice cream is a vanilla no churn recipe I use.
But- my favorite part of this post is the sifting part! My mom used to entertain the grandkids by letting them sift flour. - She wasn't using it for anything, but they loved to sift!!! Talk about great memories!!
