Making acorn squash puree is easy and low maintenance! With only 2 ingredients! It's the perfect puree for making muffins, baby food, pancakes, and so much more! You can even enjoy it on its own!
Preheat the oven to 350°F. Cut the acorn squash in half. Dig out the seeds and strings. Discard or roast them later.
Dip the basting brush in olive oil and evenly coat the flesh of the acorn squash. Place the acorn squash hard shell up onto a baking sheet lined with aluminum foil.
Roast in the preheated oven for 45 minutes. Allow it to cool for 10 minutes. Using a spoon remove the insides of the acorn squash and place in a blender or food processor.
Blend the acorn squash for 20-30 seconds. Feel free to use immediately or store in the fridge.
