Creamy 

 Pesto Pasta

This quick and easy creamy pesto pasta is rich and full of flavor. Silky smooth in texture, the pesto pasta sauce is tossed with tender cooked penne pasta and vegetables.

INGREDIENTS

Penne | Salt | Asparagus  Zucchini | Olive Oil  Pine Nuts | Basil | Tarragon  Parsley | Lemon Zest  Garlic | Parmesan  Pepper

Bring a large pot of water to a boil. Add salt and pasta then cook according to package instructions. Cut asparagus into bite-size pieces. Cut zucchini into matchsticks. 

INSTRUCTIONS

Add asparagus and zucchini to the pasta after it's been boiling for 6 minutes. Blanch veggies for 2-3 mintues. While they cook, heat oil in a skillet and toast Pine nuts until they are golden brown.

Put the pine nuts, basil, tarragon, parsley, lemon zest, garlic, parmesan cheese, and pepper in a food processor or blender.  Turn it on and stream in the oil until a thick sauce forms. 

Slowly add a ladle of hot, starchy pasta water to the pesto and blend until combined.  Drain the pasta and veggies and place in a large bowl. Immediately add in the pesto. 

COMBINE

Toss the pesto sauce with the pasta and veggies until coated evenly.  Serve and Enjoy!
