INSTANT POT MEXICAN RICE

Avocado Oil

Onion

Garlic

White Rice

Crushed Tomatoes

Cumin

Smoked Paprika

Cilantro

Set instant pot to saute mode & add oil, garlic & onion. Saute for 3 minutes.

INSTRUCTIONS

Add rice & stir. Then add chicken stock, tomatoes, cilantro, cumin, paprika, garlic powder & salt.

Put on the lid, seal. Set to 8 minutes on High Pressure. Once done, twist the pressure knob to release pressure - beware of steam! 

Fluff, Mix & Enjoy! 

Top with fresh chopped cilantro and sun-dried tomatoes if desired!

I find this is the best oil to use as it's a healthy fat & does really well in high heat.

I don't rinse my rice for this recipe, but you can if you prefer.
