with Garlic and Rosemary

Delicious, juicy, and tender baked chicken that is made with fresh lemons, garlic, rosemary and thyme. Seasoned and coated with a butter-herb sauce and baked to perfection!

Chicken Thighs Lemon Juice | Lemon Zest Olive Oil | Garlic Fresh Chopped Thyme Fresh Chopped Rosemary Salt | Black Pepper | Butter Lemon or Lime Slices

Place lemon juice, lemon zest, olive oil, garlic, thyme, rosemary, salt, and pepper in a small bowl. Whisk to combine.  With the tip of a sharp knife, make a shallow cut into each of the chicken 2 or 3 times, about half inch long. 

Place meat and marinade in a gallon sized resealable bag. Rotate the bag so all meat is covered in the marinade. Seal the bag, place in a dish, and refrigerate for at least 12 hours.  After marinating, preheat oven to 375° and place chicken in a single layer in a large baking dish. 

Bake for 30 minutes, or until internal temperature has reached 165°.  When done, remove the baking dish from the oven and discard the additional liquid. 

Melt the butter and baste it on top of each piece. Allow to rest for about 5 minutes prior to serving. Garnish with fresh lemon or lime slices, if desired.  Enjoy!
