This prime rib is seasoned with a simple dry rub and then lathered in a homemade compound butter that helps form the most delicious outer bark.

Combine butter, garlic, rosemary, salt, and pepper using a whisk or hand mixer. Place half the butter mixture onto parchment paper. Set aside the remaining.
Starting from one edge, carefully roll the mixture and form a cylinder, twisting the end on both sides. Refrigerate for 2 hours before slicing when the rib is ready.
Combine the prime rub seasoning ingredients in a bowl. Add olive onto the roast then apply the spice rub. Using your hands apply the butter you set aside earlier.
Preheat smoker to 225° and put roast directly on rack. Smoke for 3-4 hours. Remove then rest for 3-5 minutes before slicing. Top each slice with a piece of refrigerated compound butter.
