Caramelized Onion and Goat Cheese Tart

Made with a buttery pastry crust, this cheese tart is made with rich onions cooked down until they are sweet. This simple caramelized onion and goat cheese tart is not just delicious but pretty good looking too! With under 5 ingredients and a little bit of time, proudly serve this tart when you want to feel a little fancy!

Ingredients

  • 4 yellow onions, about 2 ½ lbs
  • 4 oz goat cheese
  • 2 sheets puff pastry
  • 1 Tablespoon olive oil, for caramelizing the onions
  • ½ teaspoon salt, for caramelizing the onions

Instructions

Caramelizing the Onions

  • Peel the onions, then slice thinly into rounds.
  • In a large saute pan over medium high heat, add the olive oil, onions, and salt . Stir to combine.
  • Cook the onions for about 5-7 minutes on high heat to get things going, then reduce the heat to medium low.
  • Cook for about an hour, stirring every 7-10 minutes, until the onions are golden and nicely caramelized throughout.
  • Once the onions are golden brown, remove from heat and let cool while you get ready to assemble the tart.

Assembling the Tart

  • Defrost the puff pastry according to the directions on the box.
  • In a tart pan, press the puff pastry into the bottom and sides, using the first piece to cover the bottom and the second piece to fill in as needed. Save any leftover puff pastry for the top.
  • Once the puff pastry is in the pan, layer in the cooled caramelized onions and then crumble the goat cheese over the top.
  • Layer on any extra puff pastry (optional) and put into the oven at 400 degrees for about 30 minutes.
  • Take out of the oven and let cool a few minutes before cutting and serving.

Notes

  • One of my best tips is around purchasing puff pastries. If you can find an outlet store, stock up on them when it’s on super sale. Keep a few boxes in the freezer at all times for quick and easy meals.
  • You can caramelize the onions ahead of time! This is a huge time saver. On the day you want to make the cheese tart, you can just assemble and bake. Store in an airtight container in the fridge, and then use as needed.
  • Goat cheese is a key ingredient in this recipe. Even if you don’t think you are a goat cheese fan, try it. The tang from the cheese goes so well with the sweetness of the onions.
  • Defrost the puff pastry according to the directions on the box. I normally leave it on the counter in the box while the onions caramelize.
  • If you find that your puff pastry has gotten too warm once you've put it in the tart pan, simply put it back in the fridge for 10 minutes before filling it.
