Jammy Granola Crumble Squares

These little Jammy Granola Crumble Squares are delish, gluten free and perfect for breakfast or a snack! The Banana Nut Granola paired with the cinnamon, strawberry jam and banana take the taste of these squares to the next level! Jam filled with every bite, these are the perfect snack for a road trip or after a sporting event!

Ingredients

  • 1 cup gluten free all purpose flour
  • ½ cup plus 3 Tablespoons oat flour
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon baking soda
  • 1 cup packed brown sugar
  • 2 eggs
  • ½ cup smashed banana 1 medium banana
  • cup ¼ unsalted butter softened
  • 1 teaspoon vanilla
  • 2 cups and ¼ Gluten Free Banana Nut granola clusters
  • 1 10 oz jar of strawberry jam fruit spread

Instructions

  • Preheat oven to 350F. Coat a 13x9x2 pan with baking spray or coat with olive oil.
  • In a small bowl, whisk together the gluten free flour, ½ cup oat flour, salt, baking powder, cinnamon, and baking soda.
  • In a larger separate bowl, stir together the brown sugar, eggs, smashed banana, butter and vanilla until smooth. Add in the flour mixture from your smaller bowl and stir until well combined.
  • Slowly pour in 2 cups of Gluten Free Banana Nut Soft Baked Whole Grain Granola Clusters into your mixture.
  • Transfer ¼ cup of the batter to a small bowl. Add the 3 Tablespoons oat flour and ¼ cup granola and stir until the mixture forms clumps. Set aside.
  • Spread the batter in the prepared pan and spread the jam in an even layer over the batter.
  • Sprinkle the reserved oat clumps over the jam.
  • Bake uncovered for 20 to 25 minutes or until the crumble topping turns golden brown.
  • Cool completely and cut into squares. Store in refrigerator.
