Moroccan Skillet Chicken with Quinoa Gluten Free
Moroccan Skillet Chicken

  1. Preheat oven to 400F.
  2. Season chicken with salt and pepper. In a large skillet, heat the oil over medium-high heat. Add the chicken and cook until golden brown, about 7 to 10 minutes.
  3. Flip the chicken and add the tomatoes, chickpeas and raisins to the skillet. Mix together on medium heat for about 3 minutes.
  4. Transfer the chicken, tomatoes, chickpeas and raisins to pyrex dish or another ovenproof dish.
  5. Cook for about 20 minutes in the oven, or until chicken is done.
  6. In a separate bowl, mix together the red wine vinegar, cumin and cinnamon.
  7. Once the chicken is done, stir the spice mixture into the cooked chicken dish.
