Pesto Cod Fish

This pesto cod fish is an easy, mouth-watering dinner to make that includes healthy proteins and omega 3's. The pesto sauce adds just the right flavoring to the fish. It’s a simple, tasty way to get fish into your diet, even if you’re not a big fan!

Ingredients

  • 4-6 pieces Frozen Cod Fish
  • ¼ cup Extra virgin olive oil
  • 1 cup Sliced almonds
  • 2 tbsp +1 tsp Basil
  • 1 teaspoon Black pepper
  • 3 large cloves Garlic
  • 4 tablespoon Fresh shredded parmesan cheese
  • 1 cup Extra virgin olive oil
  • 1 teaspoon Salt

Instructions

  • Preheat the oven to 400 degrees. Place the frozen cod fish pieces onto a baking dish. I like to use a pyrex glass baking dish.
  • Drizzle the fish with olive oil, making sure the bottom of the pan is also drenched in olive oil to prevent the fish from sticking onto the pan.
  • Cover the baking dish with aluminum foil and stick in the oven. Bake for 30 minutes.
  • In the meantime, add the almonds, basil, black pepper, garlic, parmesan cheese, olive oil and salt into a blender. These are all of the ingredients used to make the pesto sauce.
  • Blend all of the pesto sauce ingredients until well-blended for about 3-5 minutes. The pesto is now ready.
  • After 30 minutes, remove the aluminum foil and stick the fish back into the oven for an additional 50 minutes. When done baking, place the cod fish on a plate.
  • Drizzle the cod fish with pesto sauce and serve immediately.
