Pesto Cod Fish
This pesto cod fish is an easy, mouth-watering dinner to make that includes healthy proteins and omega 3's. The pesto sauce adds just the right flavoring to the fish. It’s a simple, tasty way to get fish into your diet, even if you’re not a big fan!

- 4-6 pieces Frozen Cod Fish
- ¼ cup Extra virgin olive oil
- 1 cup Sliced almonds
- 2 tbsp +1 tsp Basil
- 1 teaspoon Black pepper
- 3 large cloves Garlic
- 4 tablespoon Fresh shredded parmesan cheese
- 1 cup Extra virgin olive oil
- 1 teaspoon Salt
Preheat the oven to 400 degrees. Place the frozen cod fish pieces onto a baking dish. I like to use a pyrex glass baking dish.
Drizzle the fish with olive oil, making sure the bottom of the pan is also drenched in olive oil to prevent the fish from sticking onto the pan.
Cover the baking dish with aluminum foil and stick in the oven. Bake for 30 minutes.
In the meantime, add the almonds, basil, black pepper, garlic, parmesan cheese, olive oil and salt into a blender. These are all of the ingredients used to make the pesto sauce.
Blend all of the pesto sauce ingredients until well-blended for about 3-5 minutes. The pesto is now ready.
After 30 minutes, remove the aluminum foil and stick the fish back into the oven for an additional 50 minutes. When done baking, place the cod fish on a plate.
Drizzle the cod fish with pesto sauce and serve immediately.
