Marinate your chicken for 30 minutes in olive oil and balsamic vinegar. Chop up the spinach, garlic, and artichokes and combine those with the sun dried tomatoes and stir.
Preheat oven to 375°. Gently slice through the middle of chicken breast, starting on one side and not going all the way through to the other, then stuff the inside with vegetable mixture. Close it up and then tightly wrap 2 pieces of bacon around it. Secure with toothpicks.
