Breakfast Egg Muffins

Rinse, and chop spinach, scallion, and basil. Mix with cubed cherry tomatoes, feta, and grated mozzarella. Place in a greased muffin tin.

INSTRUCTIONS

Whisk cream and cornstarch, add eggs, then mix in salt, pepper, garlic powder and cumin. Pour over the filling in the muffin tin.

Bake for 20 to 25 minutes, then leave to cool down inside the muffin tin before removing them; otherwise, they will deflate too quickly and potentially collapse.
