Boil the chicken breasts, be sure to include the onion, garlic, salt and pepper. Cook your rice to the instructions. When chicken is done, drain the water and throw away the onion and garlic. Shred the chicken into a large mixing bowl.
Combine the rest of the ingredients except for the ritz crackers, onion, and butter. Put the rice and chicken mixture into a 9x13 baking dish. Bake in the oven at 350° for an hour covered with aluminum foil. When done cooking set aside. Sauté the onion in a sauce pan.
While the onion cooks, crumble the ritz crackers into a bowl. Pour the onion and butter into the ritz bowl and mix. Pour the mixture on top of the casserole and broil until crackers are golden. Cool for 15 minutes and serve!
