EASY ORZO

PASTA SALAD RECIPE

This delicious orzo pasta salad is filled with fresh chopped vegetables, tender orzo, and tossed in simple dressing made with freshly squeezed lemon juice and extra-virgin olive oil.

INGREDIENTS

Orzo | Cucumber Cherry Tomatoes | Green Onions Garlic Cloves | Red Onion  Cilantro | Jalapeno | Lemon Extra-Virgin Olive Oil  Pumpkin Seeds

Cook the pasta according to package instructions. Drain and rinse with cold water. Place in the refrigerator. Peel the cucumber and dice into bite-sized pieces. Cut the green onions, mince the garlic and dice the red onion. Finely chop the jalapeno.

INSTRUCTIONS

Put all the chopped vegetables into a large bowl and add pumpkin seeds. Mix to combine all the ingredients. Add the pasta to the vegetable bowl.

Add salt and pepper to taste as well as the juice of a lemon. Drizzle the olive oil over the salad while slowly mixing. 

Serve immediately or once the salad has chilled for 1-2 hours in the refrigerator.
