Cook the pasta according to package instructions. Drain and rinse with cold water. Place in the refrigerator. Peel the cucumber and dice into bite-sized pieces. Cut the green onions, mince the garlic and dice the red onion. Finely chop the jalapeno.
Put all the chopped vegetables into a large bowl and add pumpkin seeds. Mix to combine all the ingredients. Add the pasta to the vegetable bowl.
Add salt and pepper to taste as well as the juice of a lemon. Drizzle the olive oil over the salad while slowly mixing.
