Preheat your oven to 400° and line a baking sheet with aluminum foil. Cut tomatoes lengthwise and baste in olive oil, salt, and pepper. Roast for 45 minutes in the oven. In a Dutch oven heat olive oil and butter over medium heat.
Add the onion and garlic to the pan and sauté. Add the canned tomatoes, basil, thyme, roasted tomatoes, and chicken stock. Add salt and pepper and allow the soup to simmer for 40 minutes. Blend the soup until smooth.
Put the soup back into the Dutch oven and add heavy cream and butter. Bring to a low boil then simmer for 10 minutes. Top with parmesan cheese, basil, or sour cream.
