Preheat oven and cook sausage in a skillet. Spread raw biscuit dough across bottom of baking dish, sealing along the sides and middle.
Evenly sprinkle on the cooked sausage, shredded pepper jack and cheddar cheese. Whisk together eggs, half and half, and seasonings.
Pour egg mixture over cheese, sausage, and biscuits. Bake for 40 minutes. Allow to rest for 5 minutes. Serve warm.
