A classic Indian dish with a twist! This Creamy Chicken Curry recipe is made in one pan with tender chicken in a creamy curry sauce cooked on top of fresh asparagus.

KEY ingredients

Asparagus | Chicken Breasts Cream of Chicken Soup Mayonnaise | Lemon Juice Curry Powder | Cheddar Cheese Olive Oil | Salt | Pepper

Trim the asparagus and place in an oven-safe dish. Cut the chicken into bite-sized pieces and season with salt and pepper.

INSTRUCTIONS

Brown the chicken in oil, for about 3-4 minutes on each side and arrange over the asparagus.

Combine mayonnaise, lemon juice, and curry powder; and pour over the chicken. Cover and bake for 30 minutes.

Sprinkle with shredded cheese and place back in the oven until the cheese has melted.
