Chicken Pesto Pasta

This creamy pesto pasta is perfect for any busy weeknight dinner. The chicken is sautéed in fresh garlic then tossed in a rich and flavorful basil pesto sauce mixed with Parmesan cheese.

INGREDIENTS

Carrots | Pasta | Butter | Olive Oil | Ground Pepper | Salt | Garlic Cloves | Chicken Breasts | Pesto Sauce | Parmesan | Basil

Thinly slice carrots into matchsticks. Rinse and set aside. Bring a large pot of water to a boil. Cook pasta according to package directions. 

INSTRUCTIONS

Melt butter in a large skillet. Add carrots and saute for 7-10 minutes. Remove and set aside. Add olive oil to the same skillet then saute the minced garlic for 1-2 minutes. 

Season the diced chicken with salt and pepper and add to the skillet. Cook for about 7-10 minutes. Remove from skillet and set aside. When the pasta is finished cooking, drain and return the pasta and 1 tablespoon of butter to the skillet. 

Add the pesto sauce, parmesan, sauteed carrots, and chicken to the skillet with the pasta. Toss to combine. 

SERVE

Divide the pasta among four plates. Garnish with fresh sliced basil. Serve immediately.
