Sauté garlic and onions in the Instant Pot for 2-3 minutes, then add in chopped bacon and paprika.
Add in the chicken and sauté until lightly browned. Then add in the fresh mushrooms, spinach, and sun-dried tomatoes.
Add in the white wine and thyme and cook on Poultry setting for 8 minutes. Add in cornstarch and allow to lightly boil, whisking until the sauce thickens.
