Healthy, fresh, and bursting with flavor, this easy skillet Peach Balsamic Chicken recipe is a savory chicken dish featuring a combination of flavors including balsamic vinegar, fresh basil, and fresh peaches. It's the perfect dinner for summer!

  1. Heat extra virgin olive oil in a large skillet over medium-high heat. Cut onion into small slivers and add onion to skillet. Sauté onions for about 3 minutes.

  2. Season your chicken with salt and pepper and add to the skillet. Sauté until golden brown, about 2 1/2 minutes per side. Remove chicken from skillet and transfer to a plate. Note - your chicken will not be done.

  3. While leaving the oil and onions in skillet, add 1 more teaspoon of extra virgin olive oil and add garlic. Sauté onions and garlic for about 1 minute.

  4. Add balsamic vinegar and stir until liquid is reduced by half, about 1 minute.

  5. Stir in honey and then add in fresh peaches and tomatoes. Add in more salt and pepper to taste.

  6. Return chicken to skillet, placing the chicken in the middle between the peaches and tomatoes. Cover skillet with lid and reduce heat to medium-low. Allow chicken and sauce to simmer until chicken has cooked through, about 12 to 15 minutes. Ensure the temperature reaches 165 degrees on a meat thermometer.

  7. Top with fresh basil.
