    Pumpkin Pie

    Pumpkin, cinnamon and clove...this traditional homemade pumpkin pie recipe is a MUST at your Thanksgiving table! The single most popular and most requested holiday dessert, this one is super simple to make!

    We only have a couple of days left before Thanksgiving! And we all know that Pumpkin Pie is one of those desserts that HAS to be on your table! And ya'll, you just have to have pumpkin pie! You just have to!! It's a staple Thanksgiving dessert!

    But ya'll, I just have to share with you what happened to my son a couple of years ago with this pumpkin pie. Oh, this absolutely broke his 3 year old little heart!

    My son came home from his pre-school's Thanksgiving feast with tears in his eyes and said, "Mommy, I didn't get any pot pie today! It was all gone!" I was like..."pot pie?" Then I remembered that in his little mind "Pot Pie" equals "Pumpkin Pie". So I said, "Ok buddy, let's make a pumpkin pie!" His little face lit up and that made my day! And we served it with this pumpkin gelato recipe!

    Ya'll, my son is the one who made this pie, not me. Unbelievable, huh?! That's how easy this is. I thought it would be fun for him to measure out all the ingredients and mix everything. And let me tell you, he had a blast making his "pot pie" and look at how amazing it turned out! Ok, that's not bad for a 3 year old and I promise I did not help that much! To his advantage though, I did have a pre-made pie crust in the freezer. I typically make my crusts from scratch! You're probably asking yourself, "Where can I buy a pre-made Gluten Free pie crust?" Well, I'm glad you asked! I recommend this brand called The Gluten Free Shoppe. If you want to make your own from a mix, you have to go with Bob's Red Mill Gluten Free Pie Crust Mix.

    So what does pumpkin pie taste like? It tastes like the best combination of a sweet potato with cinnamon, clove, allspice and nutmeg. It tastes like the fall season. It tastes like the holidays smell. Oh and let me tell you...this Pumpkin Pie was FABULOUS!

    So why THIS pumpkin pie recipe when there are so many other pumpkin pie recipes out there? Let me tell you why...it's fast, delicious and super easy to make. Remember...my 3 year old made this pumpkin pie. I just observed. With all the other hustle and bustle in your life this holiday season, don't you deserve something easy?!? Wouldn't it be nice to delegate this to your kiddo to make?!

    Oh and my precious 3 year old's little hands plopped on the whip cream and sprinkled just enough cinnamon on top to make it pretty and give it an extra taste of cinnamon because that's what he likes!

    Honestly, I don't even like pumpkin pie all that much, but this recipe is fantastic. And it was fast! You can make a gluten free version if you get a gluten free pie crust! If you still don't have a recipe for your holiday pie, this one will please any crowd!

    Ingredients

    • 2 large eggs, beaten
    • 1 15 ounce can pumpkin puree
    • ½ cup sugar
    • ¼ cup light brown sugar, packed
    • ¼ teaspoon cinnamon
    • ¼ teaspoon nutmeg
    • ¼ teaspoon clove
    • ½ teaspoon sea salt
    • ½ can Eagle Brand sweetened condensed milk
    • 1 pie shell

    Instructions

    • Preheat oven to 400°.
    • In a small bowl using a spoon, mix together sugars, spices and salt.
    • In a large bowl using an spoon, mix together eggs and pumpkin puree. Set aside.
    • Add the sugar mixture from the small bowl into the larger bowl and stir with a spoon until smooth.
    • Slowly pour in sweet condensed milk and stir with a spoon until well mixed.
    • Pour pie mixture into pie shell and bake at 400° for 15 minutes.
    • Reduce heat to 375° and bake another 45 minutes until set.
    • Cool completely on a wire rack. Super yummy with cool whip on top!
