It’s actually COLD here in Phoenix, AZ and what does that call for…a wonderful homemade stew! This Southwest Stew is perfect for the cold weather and it’s so easy to make because you are literally going to throw all the ingredients in your CrockPot and let it do all the work. Well, you don’t HAVE to. You could put it in a big pot on the stove but why would you do that when your CrockPot can do all the work for you!!
Speaking of cold weather and stew recipes that go well with this weather, we had a hailstorm yesterday and the kids were like, “Mommy! It’s snowing!!” So I figured it was time to get out my daddy’s Southwest Stew recipe! Ok seriously, this recipe is so easy! I have no idea where my dad got this recipe, but it’s been in my family since I was a little girl. This recipe is high in fiber and protein. It’s also gluten and dairy free. I made a pot last night in the CrockPot so I can it throughout the week for lunch! It’s perfect for dinner, lunches or as a snack!
This dish also goes great over rice or with cornbread! For toppings, my dad always sprinkled his favorite shredded cheese on top and added a small spoonful of sour cream. Guys…enjoy this one, it’s a family favorite!

- 2 lbs ground beef
- 1 1/2 cups onions, diced
- 1 28 ounce can petite diced tomatoes, liquid reserved
- 1 16 ounce can pinto beans, rinsed and drained
- 1 16 ounce can whole kernel corn, rinsed and drained
- 1 cup Pace Picante Sauce, (I recommend Medium)
- 3/4 cups water
- 1/2 teaspoon chili powder
- 1/2 teaspoon cumin, ground
- 1/2 teaspoon garlic powder
- 1/2 teaspoon ground black pepper
- 1 teaspoon salt
Brown the hamburger meat in a skillet until no longer pink. Drain and pour the meat into the CrockPot.
Combine all other ingredients above into the CrockPot that contains the ground beef and stir well.
Cook for 5-6 hours on low or cook for 2- 3 hours on high.
Sprinkle fresh grated cheese or add sour cream as a topping to this Southwest Stew!
