Making meatloaf is so simple! Preheat the oven to 350°F. Using a sharp knife, finely chop the onions, garlic clove, and bell peppers. Expert Tip: Using a vegetable chopper will speed up the chopping process and make the prep a lot easier!
Once the vegetables are chopped, heat the olive oil in a skillet. When the oil is hot, put the chopped onions, garlic, and peppers into the skillet and sauté for 3-5 minutes or until tender. Set aside.
In a large bowl, combine the uncooked ground beef, ground turkey, salsa, egg, salt and black pepper. Then, add in the sauteed vegetables and the cooked brown rice and mix with a spoon until well combined.
Place the mixture in a meatloaf pan and spread evenly until level. Place the pan into the oven an allow the meatloaf to cook.
Bake for 50 minutes or until the center of the baked meatloaf reaches 165°F. Expert Tip: You can check the internal temperature by inserting a meat thermometer into the center of the loaf.
After cooking the meatloaf, remove it from the oven and place it on the counter to cool for 5-10 minutes. Top with additional salsa, slice, and serve. Tender, juicy, and flavorful, this really is the best ever meatloaf and is one of our family's favorite dinners...especially when I serve it with these marinated potatoes. The most common reason meatloaf falls apart is due to the lack of binding agents. The binding agents used in this healthy meatloaf recipe is cooked brown rice and egg. Since these ingredients don't bind as well as crackers or breadcrumbs, this meatloaf tends to crumble, especially when it has not had an opportunity to cool long enough.
For this recipe, yes. The sauté process helps soften the onions and peppers. When cooking the meatloaf, they will continue to soften even more. To avoid a slightly crunchy texture, don't skip the sauté step.

- 1 Tablespoon olive oil
- ½ onion, finely chopped
- ½ red bell pepper, finely chopped
- ½ green bell pepper, finely chopped
- ½ lb. ground turkey
- ½ lb ground beef
- 1 cup chunky salsa
- 1 egg, beaten
- ¾ teaspoon salt
- ½ teaspoon black pepper
- 1 clove garlic, minced
- ½ cup brown rice, cooked
Instructions
- Preheat oven to 350°F.
- Using a sharp knife cut and deseed the red and green pepper.
- Finely chop the onion, red pepper, and green pepper. Expert TIp: using a vegetable chopper makes this process easier and faster.
- Heat the olive oil in a skillet and when hot, put the chopped onions and peppers in the skillet. Sauté the vegetables for 3-5 minutes until tender.
- In a large bowl, combine the raw ground beef, raw ground turkey, salsa, egg, salt, black pepper, and garlic.
- Stir in the sauteed vegetables and then add the cooked brown rice.
- Place the mixture in an oblong bread loaf or in a baking dish and form into an oblong loaf.
- Bake for 50 minutes to an hour or until the inserted thermometer reaches 165°F.
- Allow the meatloaf to cool for 5-10 minutes.

I am going to make this today I don't have all of the vegs but will substitute with seasonings also I have instant brown rice just not sure if I should cook it first or just put it in Meatloaf is my favorite comfort food with mashed or scalloped potatoes I am looking forward to trying this T hope it doesn't come out testing like stuffed peppers wish me luck.

I made this recipe and it was so good and moist I had to leave a comment. While it was cooking I started researching other recipes and variations I could try (I want to try frozen vegetables to make it easier), and I came across several tips that said I had to do a fattier meat combo, so I was worried it would come out dry. It came out super moist! I used 1/2 full fat turkey ground meat and 1/2 90/10 beef.

I use this same recipe from a very old copy of Prevention Magazine. Just curious how much raw rice do you cook to equal 1/2 cup cooked rice? I had assumed it was 1/2 Cup of brown rice then cook, but that = 2 Cups cooked rice. It was still delicious, but very very crumbly!

Hi Cathy! What i do is I take 2 cups of chicken broth (gluten free) and cook 1 cup of brown rice. That makes a total of 3 cups cooked brown rice. I take the 1/2 cup needed for thisrecipe and I use the rest throughout the week as a side dish for my other meals. But - to get 1/2 cup cooked rice, use 1/4 cup of dry rice and add 1/2 cup of water or chicken broth. This will give you 1/2 cup of cooked rice.
