The first fresh local strawberries that pop up in your grocery store and farmer's market means one thing - winter is over and summer is here! And strawberry popsicles are perfect for summertime!
Summer is also a season for fresh fruit! Juicy seasonal strawberries taste so much better than the winter berries that are sold during the rest of the year. The joy that sweet summer berries can bring is only amplified when they're transformed into an amazing and creamy popsicle.

- Coconut Milk - full fat yields the best results.

- If you want to make these strawberry popsicles into strawberry yogurt pops, add 1 cup of your preferred Greek yogurt to the blender. Reduce the coconut milk to 1 cup.
- Substitute in your favorite milk if you don't like or can't consume coconut products.
- Add in 1 Tablespoon of lime or lemon zest to perk up the flavor even more.
- Mix in chopped strawberries, peaches, other berries, or even kiwi slices for fun new flavors and textures.
- You can double this recipe.

Step 1: Combine the strawberries and coconut milk in a blender or food processor.
Step 2: Blend everything until it is the consistency you want.

Step 3: Then, pour the strawberry mixture into molds.
Step 4: Freeze for at least three hours and then enjoy!

Minimally, 3 hours. But I recommend letting them fully freeze which will take anywhere between 4-6 hours, depending on the internal temperature of the freezer.
It typically happens when there is too much water in the mixture. Ice crystals can form when making homemade popsicles due to a process called recrystallization.
Recrystallization occurs when the water in the popsicle mixture starts to freeze and then slowly melts and refreezes over time. To avoid this from happening, ensure you use full-fat coconut milk. The fat keeps the strawberry popsicles from becoming too icy in the freezer.
If you don't have popsicle molds try freezing the mixture in ice cube trays or in small plastic cups. You can also try some of these other creative ideas for freezing strawberry popsicles.
💭 Expert Tips
- If your strawberries aren't overly sweet, you can "perk" them up by combining 1 Tablespoon of your preferred sweetener with the sliced strawberries and let sit for at least an hour. The sugar will draw out the natural sugars of the berries (this is called macerating) and amplify the natural sweetness of the strawberries.
- If using fresh berries, use the ripest ones possible. This is a great recipe to use up overly ripe berries. Slightly bruised berries become the perfect ingredient for these strawberry popsicles.
- Run lukewarm water over the mold to easily remove the popsicle.
- Store these in the freezer and eat within 1 week.

Ingredients

Instructions
- Combine the 3 cups of strawberries and the can of coconut milk in a blender or food processor.
- Blend everything until it is the consistency you want.
- If you want diced fruit in your finished popsicles, gently fold that in now.
- Fill the popsicle molds and freeze for a minimum of 3 hours, preferable 4-6 hours.
Notes
- If your blender struggles with frozen fruits, make sure they are thawed before mixing.
- If you don't have popsicle molds try freezing the mixture in ice cube trays.
- Add to a glass of plain or flavored sparkling water for a fun summertime treat.
- If you want to make these strawberry popsicles into strawberry yogurt pops, add 1 cup of your preferred Greek yogurt to the blender. Reduce the coconut milk to 1 cup.
