    Zucchini is by far the most popular summertime vegetable! Since it's such a versatile ingredient, I prepared a plethora of tasty and easy to make zucchini recipes to broaden your horizon! You'll find tasty recipe ideas for appetizers, snacks, dinner, and dessert!

    There is an endless amount of zucchini recipes on the interweb. Just do a Google or Pinterest search and you'll be presented with more recipes made with this vegetable than you could imagine. And while I'm sure there are many good ones out there that include this healthy vegetable, all the ones I've listed below are tried and true. And let me tell you, these are easy zucchini recipes that really stand out!

    Healthy Zucchini Bread Recipe

    Even though this is a bread loaf recipe, I've labeled it as a cake. This has to be one of the moistest cakes I've ever had. The fresh zucchini adds so much moisture. This bread is full of fruits and vegetables and is a huge crowd pleaser!

    Ramen Soup 

    Skip the carbs and use zucchini noodles instead! If you like Ramen, you will LOVE this zoodle dish! This is one of my favorite vegan zucchini recipes. Made with a hearty vegetable stock, fresh ginger, and miso, this ramen soup is hands down the healthiest version you'll ever eat!

    Roasted Shrimp in Spicy Green Sauce

    Shrimp and zucchini are a perfect pair and with this recipe, you can make it ahead of time. You'll serve the roasted shrimp in spicy green sauce over sauteed zoodles and then bake it in the oven. This is an easy and healthy dinner everyone will love!

    Squashed Zucchini Pancakes

    Who would have thought that vegetable pancakes could be so delicious...and healthy! The shredded zucchini is tossed with and takes on the flavors of the leeks, garlic, herbs, and blue cheese. Add the eggs, flour, and a couple handfuls of breadcrumbs to help bind the mixture together in a thick, textured batter. From there, fry these pancakes up in a skillet or griddle and serve as an appetizer! Dip them in a Sweet & Spicy or a Sour Cream based chili sauce!
