Like most of you, we have get-togethers with our friends and family at least once a month here at Mason Manor! And when it comes to hosting, you need good drinks, like this champagne cocktail and apple martini, and some amazing appetizers!  This recipe has to be one of my ALL-time favorite appetizers! EVER!

My mom introduced me to this recipe years ago. When she told me the ingredients, I wasn't too overly excited but she told me to just wait and try a bite after it finished marinating. I'm used to marinating a variety of foods, but I'd never thought to marinate cheese! Man...was I missing out! Let me tell you, this Marinated Cheese appetizer is fantastic!

Appetizer of sharp cheddar cheese and cream cheese marinated and topped with parsley, pimentos, olive oil and garlic.

And it's SO easy to make! You literally slice and stack the two types of cheese, mix the marinade ingredients together, shake well and pour over the cheese. Cover with saran wrap and let it marinate in the refrigerator for 8 hours and then you're ready to serve!

I hardly ever eat cheese anymore but this one is so good so I splurge when I make this recipe. Or when my mom makes this recipe; yep I still enjoy when my momma makes me yummy food! Cheese has a lot of protein and good fats so I dive into this dish without hesitation. Plus, the marinade is olive oil based...I love olive oil and it's so good for you!! Heart health!!

This marinated cheese is really pretty too! Just look at it! It's perfect this time of year for the holiday season. The red, green and white scream holiday colors - so people will flock to this appetizer! You can serve this Marinated Cheese with celery, crackers or french baguettes. When I ask people what I can bring to their house for gatherings, they always say, "Bring your marinated cheese!!" So this one is absolutely worth repeating!

I like cheese in any form -- and as an appetizer, I bet it is scrumptious!! The way you present it is so attractive. The red bits on it really scream the holiday season. This recipe is a keeper.

Looks like I have been missing out too! I am going to go to the kitchen later and try making some for the next days to taste. Cheese is running through my blood and I really like the idea of marinating cheese in olive oil, vinegar, basil and onion. I wish I could take it out of my screen! 🙂

I've had marinated and brined cheeses before but never thought about trying to make it myself. Your recipe sounds very simple to make and your presentation is very attractive. It would be great to bring to a potluck. Pinned to give it a try 🙂

I love the way you have stacked it. It really does look beautiful and with all the holiday colours, it is perfect!
I have marinated paneer (the Indian cottage cheese) a lot of times but never done that with cheddar. This is on my list as soon as I get back home from my travels!

      Thanks for sharing!

How does one cut cream cheese? Mine has always been too soft, and would need to be spread rather then cut, would that still work if I spread cream cheese between the slices of cheddar? Also, can you recommend your favorite cracker to serve this with? Thanks!

You are going to love the recipe! I take my block of cream cheese and leave it in the freezer for about 30 minutes and then cut into it once it's really cold. I've had 0 issues cutting it when it's more firm. If you want a good Gluten Free cracker, I would use Glutino Crackers here: http://www.glutino.com/products/crackers/original-crackers/

I love the original and sea salt crackers.

If you want a good non-Gluten Free cracker, Triscuits are amazing and so are Pepperidge Farms Golden Butter, Harvest Wheat and the Trio. You can see them here: http://www.pepperidgefarm.com/ProductLanding.aspx?catID=716

Let me know how you like the appetizer! It's a HUGE hit every single time I make it!
