Perhaps grocery stores are different where you live, but red fermented tofu is not a typically stocked item in any of mine. So, it's not very accurate to say in "2. Sweet and Sticky Chinese BBQ Pork...Don’t worry though…all required ingredients can be found at your local grocery store!" To substitute it for anything else would be a crime. As the author of the recipe says, "The red fermented tofu adds another dimension of flavour similar to what the cooking wine."

Hey Amanda, just a friendly correction needed in this article. For Recipe #15, you mention ... "They go into the history of BBQ they talk about Memphis style, Kansas style, North Carolina Style and Texas style BBQ." What you mean to say is "Kansas City style" , not "Kansas style". There's a Kansas City in Missouri as well as Kansas, and honestly Kansas City, Missouri (KCMO) is equally or better known for the BBQ (Arthur Bryants, Gates, etc) as well as the fact that both the Kansas City Royals and Kansas City Chiefs are in Missouri, not Kansas.

Compass and Fork's article also says "Kansas City".

      =)
