    These roasted green beans are loaded with flavor and are simple to make! Tossed in olive oil and balsamic vinegar, these beans are roasted to perfection and topped with freshly grated Parmesan cheese. It's the perfect side dish for any dinner or holiday meal!

    These roasted green beans are simple to make and are absolutely delicious! Very similar to these smoker green beans, they are the perfect combination of both crispy and tender, combined with fresh sliced mushrooms coated in olive oil and balsamic vinegar, and then topped off with freshly grated Parmesan cheese. It doesn't get more simple than that!

    Learning how to make roasted green beans has never been so easy. It’s a quick, simple, no-fuss recipe that is easy enough for anyone to make. And, it's the perfect side dish that pairs well with oven baked salmon, flavorful grilled steak, or this oven baked brown sugar chicken with garlic! Or, serve these as the perfect side dish at your Thanksgiving and Christmas dinner table!

    Green beans are so versatile and can be made so many different ways. While I do love grilled green beans, roasting is one of my favorite ways to prepare them. When making roasted green beans in the oven, they develop a whole new delicious depth of flavor. And the balsamic marinated mushrooms add a pop of flavor and adds a nice tangy finish!

    1. The prep is quick, easy, and can be done ahead of time.

    2. Not only are these a light and healthy side dish for any dinner and at your holiday table, but they are also great for meal prep! These will last in your refrigerator for 3-4 days.

    3. This is a versatile recipe and tastes great when you add nuts, bacon, fresh squeezed lemon juice, and so much more!


    🛒 Ingredients You'll Need

    Green beans, oil, balsamic vinegar, parmesan cheese, and mushrooms on a counter.
    • Green Beans - fresh is best. Using beans that are bright green and firm in texture is a must when making roasted green beans in the oven. If you use a canned beans, they will turn out mushy. Frozen beans become soggy due to the moisture they hold during the freezing process.
    • Oil and Vinegar - use EVOO or a flavored olive oil. The balsamic vinegar helps to slightly marinates the mushrooms, which adds extra flavor to this recipe.
    • Parmesan Cheese - it's important to use freshly grated Parmesan cheese. For the freshest, most robust flavor, grate your own cheese from a block of Parmigiano Reggiano Parmesan Cheese. It provides a slight salty taste and has a subtle nutty flavor. If in a hurry, use a bag of grated Parmesan cheese. Stay away from the canned and powdered Parmesan cheese.

    📋 Variations and Substitutions

    This is a versatile side dish and tastes amazing as is but you can also switch things up and add some simple additions.

    • Fresh squeezed lemon juice after the beans have been roasted helps provide a burst of fresh flavor.
    • While regular balsamic vinegar is good, try using a flavor infused balsamic vinegar. It really enhances the flavor!
    • Top with freshly chopped basil, parsley, chives, or mint.
    • To add a bit of heat, add in a teaspoon of red pepper flakes right before roasting.
    • After removing the dish from the oven, top with 2-3 slices of salted butter and then stir to coat.
    • Top with sliced almonds.

    🔪 Step-By-Step Recipe Instructions

    Step 1: Start by preheating the oven to 450°F. Roasting requires a higher temperature, anything over 400°F. To obtain that al dente and crispy tender texture, the oven temperature needs to be high.

    Step 2: While the oven is preheating, trim the tips off the fresh beans. Then, using a sharp knife cut the string beans 2 to 3 times so you have bite-size pieces. Place the cut beans in a colander.

    Step 3: If you're not using pre-sliced mushrooms, use a sharp knife to slice them about ¼ of an inch thick. Then, rinse the vegetables in a colander.

    Step 4: Layer paper towels on a counter and pour the beans and mushrooms onto the paper towels. Using another paper towel, gently pat to remove any excess water.


    👩‍🍳 Expert Tip! It's important to remove any excess drops of water. Water on the outside of the beans will become mushy spots while roasting in the oven.

    Step 5: Place the vegetables in a gallon sized plastic bag along with the olive oil and balsamic vinegar.

    Step 6: Seal the bag and shake well.

    Cut green beans and mushrooms in a ziplock bag.

    Step 7: In a 9x13 oven safe dish, add the green bean mixture and spread evenly.

    Step 8: Roast in the oven uncovered for 40-45 minutes. Once done, remove the dish and top with the freshly grated Parmesan cheese.

    And that's all it takes to make the most delicious roasted green beans! Slightly crispy and oh so flavorful, these roasted beans are an easy side dish and are incredibly simple to make. The flavors are absolutely delicious!

    🙋 Recipe FAQs

    How do you trim and cut fresh green beans?

    The fastest way to trim off the ends is to line up 5-6 beans on a cutting board and then using a large sharp knife, cut the stems off all at once. It makes prep time much easier and a lot faster. You can even do this several days ahead of time and store them in the refrigerator until ready to roast.

    Do green beans need to be blanched before roasting?

    Not for this recipe, no. Blanching helps make fresh string beans crisp tender, which is not necessary to do beforehand for this recipe because that's what happens when you roast them in the oven at a high temperature.

    💭 Expert Tips

    • To save even more time, be on the lookout for bags of green beans that have already been trimmed. These can sometimes be found in the produce section at your local grocery store.
    • You can use french style string beans if you want. To make this version, simply cut the tips off in a diagonal direction. Then, slice the beans lengthwise and cut into bite-size pieces. Needa visual? Check out this video: How to Cut French Style Green Beans
    • Make these ahead of time by letting all the ingredients marinate overnight in the plastic bag. After all the ingredients have been added to the plastic bag, seal and place in the refrigerator. The flavor is amazing when you let the ingredients marinate overnight in the balsamic vinegar and olive oil.
    • For even more flavor, use a flavored olive oil and balsamic vinegar. Garlic infused olive oil with a raspberry balsamic vinaigrette is my favorite taste combination!
    • To add even more crunch, roast these in the oven for 30 minutes instead of 45 minutes.
    • Store any leftovers in a container with a lid in the refrigerator for 3-4 days. Reheat in the microwave or in the oven.

    Ingredients

    • 8 ounces fresh mushrooms, sliced in ¼ inch slices
    • 1 lb fresh green beans
    • 1 ½ tablespoon olive oil
    • 1 tablespoon balsamic vinegar
    • 2 tablespoons Parmesan cheese, freshly grated

    Instructions

    • Preheat the oven to 450°F.
    • Trim the ends off all the beans and cut them so they are bite size pieces.
    • Rinse all of the sliced mushrooms and beans in a colander and drain. 
    • Layer paper towels on a counter and pour the beans and mushrooms onto the paper towels. Using another paper towel, gently pat to remove any excess water.
    • Put all the cut vegetables into a plastic bag and add in the 1 ½ Tablespoon olive oil and 1 Tablespoon of balsamic vinegar.
    • Seal and shake the bag so the vegetables are lightly coated with the mixture. 
    • Put the mixture into a 13×9 Pyrex dish and cook them for 40-45 minutes. Cook until they are tender and crisp. All liquid should have evaporated.
    • Remove the dish from the oven and sprinkle on 2 Tablespoons of freshly grated Parmesan cheese.
    • Serve immediately.

    Notes

      The mushrooms and green beans make such a great combination. I haven't roasted green beans in a long time -- I like the idea of the balsamic vinegar on the beans with the touch of Parmesan cheese. A great vegetable dish any time of year.
